Chocolate mousse is one of the best desserts around. Today we take it one step further by putting it into a pie!
Ingredients
- 21 sandwich cookies (Oreos)
- 1/2 stick unsalted butter
- 12 oz. semi-sweet chocolate
- 1 tsp vanilla extract
- 1 pinch of salt
- 3 3/4 cups chilled whipping cream
- 1/4 cup sugar
Instructions
- Preheat oven to 350 degrees.
- Butter the sides and bottom of a 9 inch spring form pan.
- Grind the cookies in a food processor.
- Add the butter to the cookies till it is mixed all the way.
- Press the mixture evenly into the pan.
- Bake at 350 degrees for 5 minutes and remove and let it cool completely.
- Now add the chocolate, vanilla and salt to the food processor and mix it completely.
- In a saucepan bring 1 cup of cream to a boil.
- Add the boiled cream to the processor and mix until the chocolate is melted and smooth.
- Transfer the mixture to a bowl and let it cool completely, stirring occasionally.
- Beat 2 cups of cream and sugar in a large bowl untill it has stiff peaks.
- Fold the cream mixture into the chocolate mixture while being careful not to let the air escape.
- Pour the mousse onto the cookie crust.
- Put the pie into the fridge for 6 hours.
- Now for the decorations, beat 3/4 cup of cream till it has firm peaks.
- Pipe the whipped cream around the edge of the pie using a star tip.
- Decorate with chocolate shavings and halved sandwich cookies.
- Enjoy!
